Grape harvest is always manual. Grapes of each vineyard, even from the same vinestock, are picked and vinified separately.
All our grapes are vinified separately according to specific procedures singly dedicated.
Vinification is carried out under controlled temperatures in order to preserve the range of the aromas developed through the fermentation process.
For the maturation we use new or second-fill barrels and third-fill barrels and tonneaux, and in selected cases even cement vats.
For our wines, we only use natural clarification processing aids and limit the employ of sulphur dioxide.
