Why this name?
Dante Alighieri, in his Divine Comedy, to explain why Latin poet Virgilio wasn’t allowed in Heaven, has him say: “Because I was rebellious against God’s law” (since he was born before the Christian era).
In this way we want our wine to be “rebellious” against the common wisdom that Tuscany can’t produce great white wines.
This is the challenge we took up with this great Tuscany wine. It’s powerful and delicate, sapid but fresh, with hints of grapefruit, mirabelle and elegant mineralogy.

Altitude: 200 m a.s.l.
Soil: Marine and lacustrine clay with palombino limestone
Planting density and training method: 5200 plants/ha spurred cordon
Harvest method and period: Manual harvest, last week of August
Wine making process: Destemming, temperature controlled alcoholic fermentation (max. 16-17°C) of the free-run must
Yeasts: Cultured
Aging: 4 months on the lees in steel vats
Alcohol volume: 13° Vol.
Total acidity: 6 gr/l
Free sulfur dioxide: 25 mg/l
Aging potential: 3 years
Tasting notes
Colour: Pale straw yellow.
Bouquet: Aromas of grapefruit and yellow melon.
Taste: Very balanced between the freshness of citrus fruits and the softness of exotic fruits. Powerful and elegant, with a refreshing minerality and a slightly aromatic finish given by Malvasia.
Serving temperature: 8°
Food pairings: Excellent as aperitif, tuna fish tartare, wild smoked salmon, salt-baked sea bream, grilled swordfish.
