Tuscan Coast IGT - White Wine
This wine was born from the challenge of creating a Tuscan wine inspired by Burgundy, yet with a clear Mediterranean character.
We wanted a wine that would express the strength that sunlight gives to Chardonnay grown at these latitudes, without compromising the freshness of its aromas or the balance between sapidity and acidity.
Alcoholic and malolactic fermentation in an oval cask gives the wine intense aromas of citrus and acacia. In addition, bâtonnage on the fine lees for 8 months lends it a solid structure and notes of ripe fruit that complete the minerality imparted by the soil.

Soil: Lacustrine clays with pebbles derived from the weathering of effusive rocks
Planting density: 5200 plants/ha
Training method: Single spurred cordon and Guyot
Harvest: Manual
Wine making process: Destemming without crushing, 24-hour cold skin maceration and gentle pressing. Alcoholic and malolactic fermentation in barrels at a controlled temperature
Aging: Min. 8 months in 30hl oval barrels with bâtonnage of the fine lees
Aging potential: 5 years
Alcohol content: 12,5° – 13,5°
Serving temperature: 12°C
Food pairings: Clam sauté, tagliolini with lobster sauce, red seabream in crazy water, stewed cod fish, freshspring pecorino, Parmigiano reggiano.
