“Your Merlot certainly deserves to be presented in purity, but why do not add to it the complexity of your Cabernet or the freshness of your Sangiovese Piccolo?”, an old French friend asked us.
The question deserved an answer, and Graziana Grassini has satisfactorily replied producing a wine which comes out from a “clos” known as “Campo del Pari” for being a flat stretch on a hilltop.
Powerful and elegant, this wine combines Merlot’s spiced and balsamic aromas with a rich complexity which stands out with a smooth and prolonged finale.
Campo del Pari is a wine which fully rewards the care and the selection of the grape from the vineyard required, the carefully controlled duration and temperature of the fermentation, the complex refinement process which combines the use of new and second-passage barriques and the stabilization due to a short passage in cement.

Wine making process: Destemming without pressing, temeprature-controlled alcoholic fermentation followed by maloactic fermentation

Aging: 12 months in barriques, 4 months in concrete vats, min. 12 months in bottle

Total acidity: 5,5 gr./l.
Free sulfur dioxide: 20 mg/lt
Aging potential: Over 10 years
Tasting notes
Colour: Garnet red with violet hues.
Bouquet: Fruity nose with hints of sour cherry and violet and balsamic notes.
Taste: Elegant and soft taste, with aromas of ripe cherry, plum and light spicy notes. Long and persistent finish.
Serving temperature: 18°-20°
Food pairings: Vegetable pies, tagliatelle with pheasant sauce, yellow saffron risotto, grilled meats, beef brasato, stewed stockfish, Cheese: french Cantal cheese.
